Comfort food
I know you all are just the gals to appreciate this. Had a bad week at work last week and needed some comfort food fast. My most "comfortable" food is anything chocolate. So here goes instant sugar-free hot fudge sauce. I took two tsp of Hersheys Special Dark Cocoa Powder, one Tbs of granulated Splenda, and 1/4 c. of water and nuked it for 30 seconds. Let it cool for about 5 minutes and poured it over vanilla ice cream. Instant comfort.

Re: Comfort food
Best comfort food ever for me is mashed potato. When I lived in England I used to buy Smash and mix it up in a bowl with some olive oil and either baked beans or mushy peas. Gourmet? No. Exactly what I wanted? You bet!
My friend knocks up a healthy variant with potatoes, kumara and other root veges, olive oil, salt, and lightly mashes it all together with the skins still on. Yum.

Re: Comfort food
My comfort food is not a dessert. For me dessert is an addiction. When I need a comfort food I go for Mrs. Budds chicken pot pie. I don't know why exactly. I think it is that crust and gravy goodness!

Re: Comfort food
Mmmmmm... mashed potatos, in reasonable quantities, aren't even THAT bad for your diet.
Chocolate -- last winter, I expunged all my chocolate cravings with low cal hot chocolate spiked with a shot of brandy (for richness and...further comfort!)

Re: Comfort food
1. By definition, there is no such thing as mashed potatoes in reasonable quantities, at least not when it comes to home-made mashed potatoes with lots of cream and butter ;-) I'll eat 4 servings and then ask for seconds. (Sadly, I have no sense of serving size when it comes to potatoes.)
2. By definition, organic potatoes and good butter are part of a healthy diet ;-) Ask

Re: Comfort food
Canned Campbell's Cream of Tomato Soup, reconstituted with milk, piping hot, with lots of cheese-flavored Goldfish crackers swimming in it.
That's what does it for me.

Re: Comfort food
Honestly, as a single girl, comfort food is food someone else has cooked at home and invite me over to share! A good roast chicken and potatoes is always a winner.

On cold rainy (or snowy) days my favorite comfort food is a big bowl of beef stew with a fluffy buttermilk biscuit... or two..g.:

Re: Comfort food
mashed potatoes are definitely number 1 in my book. Whenever I have a going-away type dinner with my folks I always ask for mashed potatoes, roast beef and asparagus.
Thing is...to be truly comforting, they can only be the buttery mashed potatoes that are made by my mother with the potato masher she inherited from my grandma. You absolutely cannot find another masher...I've been told that I will inherit, someday! ..l;, until then, I quest for a somewhat-worthy masher

Re: Comfort food
Oh yeah, now you're talkin'... Even us gluten-free folks can partake, thanks to brown rice pasta. I use olive oil that I've sauteed a garlic clove in, the grated cheese, black pepper. Who needs that tomato stuff to mess up a good thing?

If I start thinking like this I'll never attain the "under-170" weight I wish to accomplish before my trip next month.

Re: Comfort food
Sausage-and-cheese salad.
As far from "salad" as possible, I guess ..g.:
The "Chinese noodles" that you get in India (noodles with a lot of vegetables and oil...).
Dark chocolate!

Re: Comfort food
That is my favorite comfort food dinner too! And I have my mom's potato masher and cherish it - I inherited it after she passed away. Her potatos were so good - fluffy and just a little bit lumpy, I can close my eyes and still taste my mom's dinners.
Using her potato masher, electric mixer from 1959, and her wooden spoons and other utensils makes me feel close to her, especially when I whip up comfort food in the fall and winter.
