    Belly Dancing in restaurants!

Finally we'll have a Mediterranean Restaurant in my city where I can dance with my students' troupe!
Should I have a contract with the restaurant?

Students don't dance for money. Only professional dancers get paid. Assuming your troupe members are all students, your performances are volunteer. If your troupe leader is a professional dancer, I'm sure she will make the call whether a contract for volunteer gigs is necessary. Enjoy this opportunity to practice your performing skills!

I might add that volunteer dancers should perform on "off" nights - Sundays-Thursdays, and the weekend entertainment should be paid professionals only. They should NEVER be the only entertainment - ideally there should be at least ONE paid professional any time there are "volunteer" dancers.

There are a couple of places here that have student nights and open haflas on Thursdays, and if an instructor organizes a student performance night, it's usually on a Sunday.

It depends on the type of contract. If it's for set wages, then maybe...but you want to think about the future too...will your wages ever go up? Or in 20 years will they still be the same (because of the contract) when they should have changed years ago?
Here we have a guild that has the minimum wage for restaurants, which is really handy. However, it takes years and years to get a wage increase.
