No problemo! This is my mother in-law's recipe. Twas the way to hubby's heart...
Lentil Soup
- 1/2 lb lean ground beef
- 1/4 cup barley
- 1 cup washed, split lentils
- 10 oz can of beef broth
- 1 clove garlic, minced
- 1 large stock celery, diced
- 1 small, crushed bay leaf
- Chopped parsley
- 6 cups vegetable stock or water
- 1 large onion, chopped
- 1 large carrot, diced
- 2 cups stewed tomatoes, mashed
Brown beef, add lentils, barley, water & broth. Bring to a boil and simmer 30 min. Add remaining ingredients, reduce heat, and simmer another 90 minutes.
