I've collected all kinds of things into playlists -- I did one with Dahlal's "15 songs every bellydancer should know," collections of music for some of my other pursuits (swing dance, tango), and things I like to group into topics just for fun. I've also compiled music for fund-raising theme lunches we've had at my office (e.g. international selections for "lunch-around-the-world") and hooked up the iPod to a dock to serve as a simple sound system.
A dock for your pod, BTW, is a handy thing to have so you can listen to music around the house or wherever without ear(phones)(buds). I also looked into getting a hookup for my car, but since my car is kind of old I found that wiring up any new stereo equipment will cost more than I wanted to spend at the time.
Oh yes, don't forget podcasts -- you can find podcasts on just about any topic you can think of. I like to study foreign languages, so I find them useful to get a daily dose (I've found one in Arabic, for you Arabic learners out there). There are bellydance-related podcasts, too.

if you have a tape player in your car and a nano, the old tape to cd converter works for this. i listen to my ipod in my mom's car all the time with that.
