    Thumbs up Got gluten, wheat intolerance?

    Can't eat bread? Well, I've just found this website and I wanted to share it because this woman's recipes are fantastic!

    I just made this bread and it is just wonderful! I haven't been able to eat bread for about two years now and my "husband" is a new diabetic and was really stressing about the things he can no longer eat, like bread. Granted that this is probably more expensive than the regular poison, er... bread that you would buy in a grocery store, but this is better for you. You would think: "How can almond meal make bread?" I don't know but the consistency is exactly like bread, maybe a tad bit more hardier and denser, but it's pretty darn good.

    Although, if you are allergic to tree nuts - then it would not be so good for you. ,f::

    I haven't tried any of her recipes yet but I've been aware of them for quite some time. I use Gluten-Free-Baking Classics by Annalise-Roberts as my go to cookbook these days. The sandwich bread is great. I make a loaf of the cinnamon raisin bread almost weekly (although this week I'm feeling more like making pumpkin bread). The brownie recipe is divine. Some of my non-GF friends think they're the best brownies ever. She uses more of a rice flour mix instead of almond flour.

    Oh! I also substitute almond milk in all her recipes and they seem to still come out great.

    That's good to know. I will check out that website. Unfortunately my Husband can't have other flour alternatives such as rice or potato flour.

    You might also want to look into coconut flour...it's next on my list of experiments, and I've heard good things about it.

    Thanks for posting the websites. I have been experimenting with almond flour and eating it has helped get rid of the edema in my right foot. I tried experimenting with different sugar substitutes as well, like yacon syrup (not so good for making hard chocolate candies) and zero sugar. The only problem is that if you buy these items at the store, they can be quite expensive. Having to do my grocery shopping online most of the time.

    Thanks for the link Jasani! I am gluten free and have seen Elena's site, but always wondered how the recipes would actually taste. I'll definitely have to experiment a bit.

    I'm finding that the almond flour is quite expensive, around 6-7.00 on-line and 10-11.00 at my local grocery store. That's an expensive loaf of bread! I'm still tweaking my own recipe

    I like Udi's Gluten free bread...very tasty. Found it at Whole Foods in the freezer section.
