I have several boxes of couscous in different flavors:
Herbed chicken
Mediterranean curry
Roasted garlic and olive oil
What can I do to jazz these up? Is there usually enough flavoring in them that adding some cooked ground beef doesn't dilute the spices and flavor? Is that even a good idea? What would you do with these that is easy and tasty?
Do you have any other yummy ways of serving it or favorite dishes that use couscous?

Cook some vegetables in chicken bouillon and serve them on the bed of couscous. Carrots and zucchini are both excellent choices for this. You can add raisins if you like.

Couscous is really good with cooked chicken added. Making it with broth (chicken, beef, lamb, or vegetable) in place of water is terrific. Adding chickpeas and/or mushrooms when you take it off the heat is good too. You can also try pouring a little warmed broth mixed with some combination of tomatoes/tomato paste, onion, chickpeas, peppers over it when it's cooked.
If you like spicy, add harissa (which has a pastelike consistency) and mix well. Harissa is the best condiment ever.

I like to serve couscous as a side with roast chicken and roasted veg (peppers, courgettes, onions etc) or with slow cooked lamb done in a Moroccan style (harissa or ras el hanout spicing).
Or you can try it as a cold dish with lots of mint, cucumber, chickpeas etc.

The cous cous I grew up with was always served under something thats been stewing in a pot for hours with lots of spices!:)
Cous Cous to middle eastern food is like white rice to chinese food, It's all about the rich saucy good stuff you serve on top ^_^ Maybe I can find some of the stuff I had when I was a kid...

I've been trying to find some recipes online for ya, but I can't find jewish libyan food recipes easilly... Crap :(
I think moroccan recipes are a good way to go, and theres tons of them online. any middle eastern recipe that is stew-like is perfect. I think the best thing for cous cous is something with a flavorfull sauce that the cous cous can soak up :)
Here are a couple recipes I did find
Amazing homemade pumpkin-based condiment that is amazing on cous cous...and just about anything :) (my safta used to make this ^_^)

heres a great wonderful spicy fish recipe, i think it would go well with cous cous :)
